SunButter Chocolate Squares

 If you are a fan of Chocolate and Peanut Butter, then you will be a fan of this take on a peanut butter cup.


I found a recipe online and made a few changes.....it is difficult to have just a small piece .... 

 

Ingredients:

  • 1 cup of cookies ... crushed (I put mine in the Vitamix) I used Enjoy Life gluten free cookies
  • 1/4 cup melted butter or coconut butter (add a bit more if needed)
  • 1/8 cup powdered sugar
  • 1 cup (I used NO SUGAR ADDED) Sun Butter
  • 1 cup chocolate chips (I used Enjoy Life Mega Chunks)
  • 1 TBSP coconut butter
  • 1 TBSP Sun Butter

 

Instructions:

  1. Combine cookie crumbs, melted butter, and Sun Butter. Add to a square baking dish lined with parchment or sprayed wth a bit of oil so the treat does not stick
  2. Refrigerate for a few minutes while you melt the chocolate
  3. Melt the chocolate chips with 1 TBSP coconut oil and 1 TBSP Sun Butter.
  4. Add melted chocolate to cooled crust
  5. Refrigerate till it sets

NOTE: Start with 1/4 cup melted butter of choice. If the mixture is still dry, add more a bit at a time.

Protein Bites Featuring Cocomels

I enjoy making changes to tried-and-true recipes to add some new life into them. Once I find a recipe I love, it becomes a blank canvas for me to try to create a new masterpiece.

Recently I made modifications to my PB Protein Bites Recipe to make it not only gluten free but also nut free, vegan, and include JJ's Sweets Coconut Sugar Cocomels (you can find them here).

My modified recipe pictured here includes:
1 cup gluten free oats (DRY)
1/2 cup SunButter
1/2 cup ground flax seed meal
1/3 cup Honey (or sugar)
1 tsp vanilla
6  Coconut Sugar Cocomels ... diced
Instructions:
  • I doubled the batch and used a stand-up mixture to combine the ingredients. 
  • Combine the ingredients and form the mixture into balls. I like to make bite-site sized or two-bite-sized balls.  
  • Refrigerate in an air tight container to let the balls become firm ... about 30 minutes.

Gluten Free Egg Free Waffles

I love playing with food and modifying recipes so that each time I make them the dish seems new. Pamela's Products makes a magnificent Baking & Pancake Mix that can be used to make waffles. I modified the recipe on the package to make the recipe my own.

Ingredients:
  • The recipe calls for 2 eggs ... I substituted 2 flax eggs
  • 3/4 cup water
  • 1 1/2 cup Pamela's Baking & Pancake Mix
  • I added: 2 TBSP cinnamon and 2 TBSP hemp seeds

I cooked the waffles in my waffle maker and topped with fresh fruit and walnuts. My husband topped his with honey and I added Sunbutter ( No Sugar Added variety).

The recipe is easy to make and simple substitutions can make the recipe your own.

Variations:
  • Add vanilla or maple flavor instead of cinnamon
  • For a denser waffle, add the version of milk you wish instead of water ... or for part of the water
  • Add gluten free chocolate chips, dried fruit, seeds, coconut, and /or nuts into the batter or as a topping

Sunflower Butter Cookies

Food Allergies and School Lunches/Parties

Cookies 

I modified a tried-and-true 6 Ingredient NUT Butter Cookie Recipe using SunButter Organic Sunflower Butter.



Base Ingredients:
1 cup SunButter
1/2 cup SUGAR (increase flax seed or protein powder and cut down/omit if you wish)
1 FLAX EGG (you can use a traditional egg if you wish)
1/2 cup FLAX SEED
1 TBSP VANILLA (optional)
1 cup sunflower seeds (I diced 1/2 of them)



Instructions:
1. Preheat oven to 350
2. Combine ingredients in a stand up mixer
3. Use your hand to roll cookies into balls of approximately equal size
4. Place balls on un-greased (or parchment lined) cookie sheet about 2 fingers distance apart. NOTE: Smaller/flatter cookies will turn out crispy.
5. Take a fork and lightly press it into top of ball both horizontally and vertically
6. Cook 10-15 minutes depending on size of cookies
7. When done, let cool for a few minutes so they hold their shape!

I cannot get enough Sun! Can You?

I cannot get enough Sun...SunButter that is!

I cannot get enough SunButter. I spotted the NEW packaging at Sprouts recently and purchased a few jars to replenish my supply. I try to limit added sugars from my diet. Thanks SunButter for helping me achieve my goals!

You can make the cookie any size ... a larger cookie can be cut in half to create a sandwich. I added SunButter to the sandwich below.

Rice Cakes Make Eating Healthy Fun

Sometimes all you want or need are the simple things. Life does not need to be complicated. All recipes do not need elaborate steps and lists of ingredients.





A rice cake topped with SunButter is a blank canvas waiting to be topped with anything you desire. Add dried fruits, nuts, seeds and enjoy. Thin slices of fresh fruit are delicious too!

Today's version is an example of how the rice cake can be made playful for a child as well!

Sunday Pancake Breakfast

Today my husband and I had the time to enjoy a breakfast together. I made oatmeal pancakes featuring Quaker Gluten Free Instant Oatmeal Packages (Maple and Brown Sugar Flavor).  The recipe is tried-and-true, the gluten free oatmeal packet of choice for the meal is the variable.

I garnished with fresh and vibrantly colored fruits since we eat with our eyes first! I wanted the meal to look beautiful and, as a result, taste even better too!

Instead of maple syrup or honey I used Sunbutter on my pancakes. The added flavor and protein made the meal!

Options: Sprinkle with seeds and dried fruit for extra texture and flavor.
