Pad Thai Rice Noodle Rainbow

Gazing at my Forbidden Pad Thai Rice Noodles I KNEW I wanted to make a dish that was full of color. The purple noodles were calling for the rest of the rainbow to join them. with Lotus Foods Forbidden Pad Thai Rice Noodles as my blank canvas, and the rainbow as my muse, I began meal prep. From start to finish, the meal was ready in less than 30 minutes.



Preparation

I gathered veggies:

  • Red bell pepper (1 diced)
  • Rainbow carrots... Yellow and Orange (2 diced )
  • Frozen peas - Green (1 cup)
  • Onion (1/2 cup diced)
  • 2 cloves of garlic (diced)

I decided on a protein ... Tofu

I decided on a sauce ... peanut 



Peanut Sauce

  • 1 tsp apple cider vinegar
  • 1 tsp brown sugar .. omit of using store bought nut butters as there are sugars added
  • 2 tsp red curry paste
  • 1 tbsp gluten free soy sauce
  • 1/2 tsp red pepper flakes
  • 2 tbsp nut butter (seed butter works too)
  • 1 tbsp olive oil/sesame oil so things do not stick to the pan 
  • add a tbsp of water if the sauce is too thick for your taste (depends on nut/seed butter you use) 

 



Instructions:

  • Prepare the peanut sauce in a small saute pan. 
  • Saute the onions and garlic is just enough olive oil to coat the pan
  • Once translucent, add the rest of the veggies and saute until el dente
  • In a separate pan, fry the tofu (or use an air fryer) 
  • In a pot, bring water to a boil and prepare the noodles as directed on the package. 
  • Toss the noodles with the sauce and add the veggies
  • Put in a bowl and top with the tofu

 

My rainbow is almost complete. 

To finish the rainbow, I should have some fresh blueberries for dessert!

Ancient Grains Stuffed Squash

I made a batch of millet and used some to stuff an acorn squash. This recipe is one I love, it is a blank canvas that can be customized to fit the needs of many eaters!


Variations:

Use any hard shell squash as a base
Use plant based protein, veggie burgers (crumbled), or ground meat

Ingredients:

  • 2 acorn squash, halved lengthwise so they rest on their side in a baking dish
  • 1/2 cup grated parmesan or mozarella cheese
  • 4 tbsp ground sage
  • 1 cup low sodium vegetable broth
  • 2 cups ground protein (crumble vegan/veggie burgers, Beyond Meat crumbles, ground turkey, sirloin, or chicken)
  • 1/2 cup raisins
  • 1/2 cup diced onions,
  • 4 cloves garlic minced 

Instructions:

  • Carve squash to remove seeds (save for another recipe)
  • Carve out additional squash, dice and add to the pan (below) to integrate into the filling and to make a deeper "bowl" for the filling
  • Saute onions, garlic, and ground protein in just enough olive oil so nothing sticks to the pan
  • Add millet (prepared makes the recipe come together faster), broth, sage, diced squash, and raisins and cook until all liquid is absorbed
  • Add salt and pepper to taste to the base of the squash bowl
  • Evenly divide cheese to base of squash bowl
  • Add filling and bake (covered) at 350 for 30 - 60 minutes (until squash bowl is soft
  • Serve with a salad or gluten free bread

Plant Based Dairy Alternatives


Plant based dairy alternatives are very popular. For years nut and soy based products have filled the space in the marketplace. They are facing more competition each day. The new products fill the space for the people who are seeking dairy free and are unable to consume nuts and soy.

Sesame Milk 


Sesame milk is a great product for the consumer who wishes a product that tastes like a nut milk but is more sustainable. For the consumer who is concerned that it takes 1 gallon of water to produce 1 almond, sesame milk is a great alternative. Sesame milk contains sesame and pea protein. Each serving is 8 grams of protein and includes calcium and vitamin D.  I enjoy drinking Hope & Sesame sesame milk and using it in recipes like Sesame Milk Chia Pudding.
 

Oat Milk

Oat milk production is simple. Gluten-free oats are soaked in water, pulverized in a blender, strained, and packaged. For the consumer who does not wish to make it at home, many companies have entered the marketplace so there is a chance there are a few options in your local store! Typically, oat milk has more fiber and protein than almond milk, but its calorie count and fat content is higher. Oat milk's advantage is that it contains more B2, B12, Vitamin D, and phosphorus than almond milk helping boost metabolism, energize the body, and prevent disease. I have found that oat milk is thicker than almond milk. Some brands have a bit of oat crumbles as residue in the bottom of the carton, so I suggest you shake the carton each time before using it! I enjoy drinking oat milk and have been working on recipes using it.

Tofu Parmesan

I was at a workshop and found that many of the gluten free options were also vegan options. Combining gluten free with vegan reduced the number of extra meals the catering company had to prepare. This allowed me to try new recipes and learn a few tricks. Tofu is an inexpensive protein which makes this meal a money-saving meal.

Preparation

Tofu Parmesan is a great take on Chicken Parmesan. I used extra firm tofu which I drained and dried out some (wrapped in a kitchen towel between two plates). The extra step of drying created a firmer texture to the tofu and makes it a bit more chewy. I try to keep the tofu in the towel for 1-2 hours if I have the time...more time will create a firmer "meaty" texture. I cut the block of tofu lengthwise and width-wise to create 4 rectangles.

Cooking

I preheated the oven to 350 and  placed the tofu on non-stick aluminum foil topped with gluten free pasta sauce. After 20 minutes I added cheese (dairy free or dairy can be used depending on your dietary preferences/needs) and allowed the cheese to melt (about 10 minutes).

Serving

I served the Tofu Parmesan with gluten free pasta and a side salad. Each person was given two wedges of tofu; therefore one package of tofu serves 2 people.

Homemade Cinnamon Peanut Butter

I love the taste of warm peanut butter ... fresh warm peanut butter is even tastier!



I keep a jar of homemade nut butter in my refrigerator at all times. I love making NUT butters in my VitaMix as all I need to make a batch is 3 cups of nuts and about 5 minutes. When nuts are on sale, I stock up which cuts the cost of each portion.

Today I made a double batch of peanut butter. The first batch was traditional creamy peanut butter and the second batch was CINNAMON peanut butter.


Instructions:
  • Place 3 cups of nuts (added 1 TBSP cinnamon to batch 2) in VitaMix and turn on low
  • Begin to use the wand to push down the nuts
  • Turn up the speed to high and use the wand to continue to push the mixture down to combine  (The nut butter will be almost smooth after about 2 minutes)
  • When the nut butter is almost done, turn the VitaMix to high and use the wand to combine for another 30 seconds. This will create the extra smooth and creamy texture. Omit this step if you wish a "grainy" or crunchy texture.  
  • To wash the VitaMix, add water half way up and run the machine for a minute. Drain. Rinse.

NOTE: You can use raw, roasted, salted, or unsalted nuts for this recipe.
NOTE: I make nut butters frequently. Experiment with the flavors ... perhaps you will start to add 1 cup of three different nuts!

Cashews for Breakfast ... Enjoy Cashewgurt as a Yogurt Alternative

I was told about the Forager Project by a family member and was excited to try Cashewgurt as a yogurt alternative. I am always looking for healthy, gluten free foods to try. I shy away from high fat dairy as I am somewhat lactose intolerant so I figured this dairy free yogurt alternative would be a great product to try!

The Cashewgurt is thin like traditional yogurt and the unsweetend plain is a bit tart like traditional yogurt. I purchase unsweetend plain yogurt to control sugar as I usually add fruit and other mix-ins into the yogurt to add flavor.


If you are a Greek Yogurt fan, the texture will seem runny. To get used to it, prepare a bowl of 1/2 Greek Yogurt and 1/2 Cashewgurt to get used to the texture.




Yogurt is often my morning blank canvas. To the yogurt I add 1 cup of fruit and:
  • 1 TBSP cinnamon or beet root powder or maca powder
  • 1/4 cup nuts and/or seeds


Today I added peach and pepitas to 1.5 cups of Chasewgurt

Date and Seed Bars

Cooking is something that brings me joy! I get excited to try a new recipe or make a few changes to a tried-and-true No Bake Date Delights Energy Bar Recipe.This recipe allows for customization in flavor profiles and well as presentation. You can make them in squares, rectangles, use a cookie cutter, or even roll into balls. Have fun! Play with your food! Make cooking fun!


Recipe:
  • 2 cups pitted dates (I get mine from Futterman Farms)
  • 1 cup nuts of choice (I used peanut this time)
  • 1 cup oats (I use gluten free)
  • 1 serving SunWarrior Classic Plus Chocolate Flavor Plant Based Protein
  • 1/4 cup pepitas/hemp seeds to garnish top - optional
Options:
  • Substitute 1 TSP vanilla flavoring or vanilla protein powder for the chocolate protein powder
  • Substitute I TSP coconut flavoring for the chocolate protein powder and ADD 1/4 cup dried cranberries and 1/4 cup coconut 

Instructions:
  • Combine 1/2 of the ingredients at a time in a Vitamix and blend until a paste is formed. 
  • Add the "dough" to a glass pan and flatten with the flat end of a spatula
  • Sprinkle the seeds to the top and push into the bar with the flat end of a spatula
  • Cover and refrigerate for at least 30 minutes
  • Cut into bars the size of your choice

NOTE: From time to time, the mixture can be extra moist depending on the moisture of the dates you are using. When the mixture is extra moist, the bar "dough" could bunch up and stop the mixture. If this happens, use a spatula and remove the mixture from the Vitamix. After a few minutes, add 1/2 back at a time and pulse until a thick smooth paste.  Add a bit more oatmeal if necessary. Each batch of dates is different!
